About Nutmeg

Nutmeg, or also called Pala in Indonesian, is a spice that grows on an evergreen tree with the scientific classification Myristica fragrans. Nutmeg is an Evergreen tree, which grows to a height of 60 feet. The tree yields Two Spices – the Dark Colored Nutmeg and the Bright Red Mace that covers it. The spice is derived from the seeds of the Myristica fragrans or fragrant nutmeg tree. It has an outstanding pungent fragrance and a warm taste. It is also slightly sweet. Nutmeg is the 2nd most traded commodity in the world. It is a native spice of Banda Islands in Indonesia and now is globally used. Nutmeg was a prized flavoring in European cuisine during medieval times, and it also featured widely in other traditional cuisines around the world. Today nutmeg is grown for culinary, medicinal, and industrial use. Nutmeg oil is one of the most important essential oil produced in Indonesia. It smells just like the spice used for seasonal dishes—warm, spicy, sweet, and woodsy.

Nutmeg's Specification

The seeds are dried gradually in the sun over a period of six to eight weeks. During this time the nutmeg shrinks away from its hard seed coat until the kernels rattle in their shells when shaken. The shell is then broken with a wooden club and the nutmegs are picked out. Dried nutmegs are grayish-brown ovoids with furrowed surfaces. The nutmegs are roughly egg-shaped, about 20.5–30 mm (0.81–1.18 in) long and 15–18 mm (0.59–0.71 in) wide, weighing 5–10 g (0.18–0.35 oz) dried. Nutmeg is a spice made by grinding the seed of the fragrant nutmeg tree (Myristica fragrans) into powder. The spice has a distinctive pungent fragrance and a warm, slightly sweet taste; it is used to flavor many kinds of baked goods, confections, puddings, potatoes, meats, sausages, sauces, vegetables, and such beverages as eggnog. There are several types of nutmeg for export purposes: whole with shell, without shell, and broken.
